Ingredients

  • 5 - celery stalks, sliced thin
  • 1 bunch green onions, chopped
  • 1/2 stick (1/4 cup) butter
  • 2 tablespoons flour
  • 2 quarts water
  • 3/4 cup powdered milk
  • 3 medium potatoes
  • - salt and pepper to taste
  • 1/2 cup chopped fresh parsley
  • 1 tablespoon dried dill weed
  • 1-1/2 cup sour cream
  • 1 package (10-ounce) frozen french-style green beans

How To Make green bean and potato soup

  • Step 1
    Saute the celery and green onions in the butter.
  • Step 2
    When the vegetables are not quite tender, add the flour, and stir in. Add the water, and stir until blended. Add the milk, and stir over medium heat until thickened.
  • Step 3
    Dice the potatoes, leaving the skins on. Add to the pot along with some salt and pepper, parsley, and dill weed. Simmer, stirring often, until the potatoes are tender, about 1/2 hour.
  • Step 4
    Twenty minutes before serving, stir in the sour cream and green beans. Simmer for 20 minutes, and enjoy.
