  • 3/4 c
    lightly salted cashews
  • 1/2 c
    water
  • 1 small
    clove garlic halved
  • 1/4 tsp
    dalt
  • 1/8 tsp
    onion powder
  • 5 c
    assorted baby greens
  • 1 c
    chopped tomato
  • 3/4 c
    fresh shelled peas cooked and chilled
  • 3
    green onions thinle sliced
  • 2 Tbsp
    lemon juice

Step-by-Step

  1. In a blender or food processor bowl, combine1/2 cup. of the cashews, water, garlic, salt, and onion powder.
  2. Cover and blend or process about 2 minutes or until mixture is smooth and creamy. Mixture will thicken as it purees. Stir in lemon juice.
  3. Cover and chill at least 1 hour or up to three days.
  4. In a salad bowl combine greens, tomatoes, peas, and green onion. Divide greens among 4 serving plates.
  5. Sprinkle with remaining cashews. Drizzle dressing over each serving.
  6. Sprinkle with fresh pepper.
