Ingredients
- 3/4 cup lightly salted cashews
- 1/2 cup water
- 1 small clove garlic halved
- 1/4 teaspoon dalt
- 1/8 teaspoon onion powder
- 5 cups assorted baby greens
- 1 cup chopped tomato
- 3/4 cup fresh shelled peas cooked and chilled
- 3 - green onions thinle sliced
- 2 tablespoons lemon juice

Step 1In a blender or food processor bowl, combine1/2 cup. of the cashews, water, garlic, salt, and onion powder.

Step 2Cover and blend or process about 2 minutes or until mixture is smooth and creamy. Mixture will thicken as it purees. Stir in lemon juice.

Step 3Cover and chill at least 1 hour or up to three days.

Step 4In a salad bowl combine greens, tomatoes, peas, and green onion. Divide greens among 4 serving plates.

Step 5Sprinkle with remaining cashews. Drizzle dressing over each serving.

Step 6Sprinkle with fresh pepper.
