Ingredients

  • 3/4 cup lightly salted cashews
  • 1/2 cup water
  • 1 small clove garlic halved
  • 1/4 teaspoon dalt
  • 1/8 teaspoon onion powder
  • 5 cups assorted baby greens
  • 1 cup chopped tomato
  • 3/4 cup fresh shelled peas cooked and chilled
  • 3 - green onions thinle sliced
  • 2 tablespoons lemon juice

  • Step 1
    In a blender or food processor bowl, combine1/2 cup. of the cashews, water, garlic, salt, and onion powder.
  • Step 2
    Cover and blend or process about 2 minutes or until mixture is smooth and creamy. Mixture will thicken as it purees. Stir in lemon juice.
  • Step 3
    Cover and chill at least 1 hour or up to three days.
  • Step 4
    In a salad bowl combine greens, tomatoes, peas, and green onion. Divide greens among 4 serving plates.
  • Step 5
    Sprinkle with remaining cashews. Drizzle dressing over each serving.
  • Step 6
    Sprinkle with fresh pepper.
