gluten free vegetarian dumpling soup
I was craving a hearty dumpling soup and due to my gluten allergy I couldn't use my regular dumpling recipe. So I did some research and came up with this delicious gluten free version. It defiantly hit the spot!

Ingredients
- DUMPLINGS
- 1 cup a.p gluten free flour mix
- 1 1/2 teaspoons xanthan gum
- As Needed pinch mixed herb seasoning (fresh herbs if you like)
- 2 medium eggs
- 1 tablespoon olive oil, extra virgin
- 1/4 cup water (or enough to make dough moist)
- SOUP
- 1/2 cup medium diced celery
- 1/2 cup medium diced carrots
- 1/2 cup small diced white onions
- 1 cup shredded spinach
- 2 cloves minced garlic
- 1 medium small diced potato
- 1-32oz can gluten free vegetable broth
- 1 teaspoon apple cider vinegar
- to season pinch salt and pepper
How To Make gluten free vegetarian dumpling soup

Step 1For dumplings: Mix everything in a bowl with a fork until a nice wad of dough is made. Add water as needed so dough is slightly sticky to the touch.

Step 2Soup: In a pot on medium low heat melt butter and saute onions,garlic,carrots,celery until onions are translucent in color than add the potatoes and spinach. Cook for another 2-3 minutes until spinach is slightly wilted.

Step 3Add cider vinegar and stir, then add broth and bring to a boil stirring occasionally.

Step 4Once it has come to a boil take dumpling dough and make small balls and drop them into the soup. They should float on the surface of the soup. After you have dropped them all in stir to ensure none have stuck to the bottom. Season with salt and pepper.

Step 5Stick a lid on the pot and cook for another 15 to 20 minutes stirring occasionally.

Step 6The soup should thicken some and the dumplings will sink a little.(this is an indicator of completion. )

Step 7Grab a bowl and eat it up!
