Most of my homemade recipes come from the need to use up what's in the frig but also when there are other things I should be doing. Number one on the list for procrastinators: COOK! Gazpacho is so healthy it's crazy. A cup of this spicy, cool soup will pretty much cover at least 2-3 of your veggie bases for the day. Don't get thrown off by the number of ingredients. It's an easy recipe; just a lot of chopping. If you have a food processor, go for it! Note to vegetarians. You will have to replace the Worcestershire sauce with a vegetarian brand.

Ingredients

  • 2 large roma tomatoes, peeled, seeded & diced (about 1 cup)
  • 2 stalks celery, diced (about 2/3 cup)
  • 2 small sweet yellow peppers (used minis), diced
  • 1/3 cup red onion, diced
  • 2/3 cup cucumber, peeled, seeded & diced
  • 3 cloves roasted garlic, mashed
  • 1 small lime, juice and zest
  • 3 cups v-8 vegetable juice, low sodium
  • 1 teaspoon worcestershire sauce (or a vegetarian brand)
  • 1 teaspoon hot sauce
  • 1 teaspoon horseradish sauce
  • 1 teaspoon red balsamic vinegar
  • 1 tablespoon olive oil, extra virgin
  • 1 teaspoon kosher salt
  • 2 tablespoons fresh basil leaves, chopped
  • 2 tablespoons fresh cilantro leaves, chopped
  • 2 tablespoons fresh parsley leaves, chopped
  • 1/2 teaspoon liquid smoke flavoring

  • Step 1
    Start by putting on a small pot of water to boil. This'll be to dip in the tomatoes so you can easily peel them. Drop them into the boiling water after you pierced a small hole with a knife in each tomato. The peel will pull away quickly. Remove from heat and plunge the tomatoes into cold water. Peel and remove seeds.
  • Step 2
    Dice the celery, peppers, onion, cuke, and tomatoes and place in a large bowl. If you like a spicier soup, use a little diced Jalapeno pepper too. Mash the garlic and add to the other veggies. Add the V-8 juice to bowl.
  • Step 3
    Add the Worcestershire sauce, hot sauce, horseradish, vinegar, olive oil, salt, basil, cilantro, parsley and liquid smoke. Stir well to blend. Cover the bowl with plastic wrap and chill for at least 2 hours to marry the flavors. Serve with a thinly sliced avocado and a squeeze of lemon juice.
