gardeners' carrot stew
The vegetables were all fresh from my garden; if you do not have these varieties, please replace with your favorite variety. But please, please, please do not skip the carrot tops. You will be pleasantly surprised! Reminiscent of French Onion Soup. Feel free to load up on fresh herbs. Lovely lavender or purple basil would be divine.

Ingredients
- 20 - cosmic purple carrots, diced
- 10 - atomic red carrots, diced
- 30 - carrot tops, chopped
- 3 - black krim tomatoes, quartered
- 1 - german johnston tomato, diced
- 2 cloves garlic, sliced
- 5 - mini red bell peppers, diced
- 1 - lamb shank bone
- 1 tablespoon smoked paprika
- 1 teaspoon cayenne
- 1/2 stick butter or olive oil
- 1 tablespoon worcestershire sauce
- - water to cover
- 1 cup champagne, optional
- - shaved cheddar to serve
How To Make gardeners' carrot stew

Step 1Place all ingredients in a crock pot on low. Slow cook for 24 hours, stirring occasionally.

Step 2Remove bone.

Step 3Serve with a heaping serving of shaved cheddar and a sprinkle of ground oregano to taste. I recommended a freshed baked crusty French loaf and unsalted sweet cream butter.
