carrot, sliced
1/2 c
onions, diced

garlic, minced
3 c
fat-free broth (beef, chicken, veggi)
1 1/2 c
cabbage, shredded
1/2 c
green beans, fresh
1 Tbsp
tomato paste
1/2 tsp
basil, dried
1/4 tsp
oregano, dried
1/4 tsp
1/2 c
zucchini, diced

How to Make Garden Vegetable Soup


  • 1Spray a large saucepan with nonstick cooking spray, heat.
  • 2Saute' the carrot, onion, and garlic clove over low heat until softened, about 5 minutes.
  • 3Add broth, cabbage, beans, tomato paste, basil, oregano, and salt; bring to a boil.
  • 4Reduce heat; simmer, covered about 15 minutes or until beans are tender.
  • 5Stir in zucchini and heat 3-4 minutes.
  • 6Serve hot.
