A great way to use the zucchini, tomatoes, and green beans from your garden! So fresh and good!

Ingredients

  • 2 tablespoons olive oil, light
  • 1/2 cup celery, diced
  • 1 cup onion, diced
  • 4 - medium size garlic cloves, minced
  • 8 cups chicken stock
  • 1/2 teaspoon dried thyme
  • 1 - bay leaf
  • 1 teaspoon salt
  • 2 cups zucchini, diced
  • 3/4 cup green beans, cut
  • 3 - roma tomatoes, diced
  • 1/2 cup navy beans, cooked
  • 1/2 cup small dry pasta
  • - freshly grated parmesan cheese

How To Make garden fresh minestrone

  • Step 1
    In a large pot, sauté celery and onion in olive oil. Cook until softened, add garlic and cook for another minute.
  • Step 2
    Now add chicken stock, salt, thyme and bay leaf. Bring to a simmer, and add the rest of your vegetables, beans, and pasta.
  • Step 3
    Bring back up to a simmer, and cook until the vegetables are tender, and the pasta is cooked, about 10 to 12 minutes.
  • Step 4
    Remove bay leaf and serve. Garnish with freshly grated Parmesan cheese. Enjoy!
