medium size garlic cloves, minced

How to Make Garden Fresh Minestrone
1In a large pot, sauté celery and onion in olive oil. Cook until softened, add garlic and cook for another minute.
2Now add chicken stock, salt, thyme and bay leaf. Bring to a simmer, and add the rest of your vegetables, beans, and pasta.
3Bring back up to a simmer, and cook until the vegetables are tender, and the pasta is cooked, about 10 to 12 minutes.
4Serve and garnish with freshly grated parmesan cheese.
