Ingredients
- 2 tablespoons olive oil, light
- 1/2 cup celery, diced
- 1 cup onion, diced
- 4 - medium size garlic cloves, minced
- 8 cups chicken stock
- 1/2 teaspoon dried thyme
- 1 - bay leaf
- 1 teaspoon salt
- 2 cups zucchini, diced
- 3/4 cup green beans, cut
- 3 - roma tomatoes, diced
- 1/2 cup navy beans, cooked
- 1/2 cup small dry pasta
- - freshly grated parmesan cheese
How To Make garden fresh minestrone

Step 1In a large pot, sauté celery and onion in olive oil. Cook until softened, add garlic and cook for another minute.

Step 2Now add chicken stock, salt, thyme and bay leaf. Bring to a simmer, and add the rest of your vegetables, beans, and pasta.

Step 3Bring back up to a simmer, and cook until the vegetables are tender, and the pasta is cooked, about 10 to 12 minutes.

Step 4Remove bay leaf and serve. Garnish with freshly grated Parmesan cheese. Enjoy!
