chopped fresh broccoli florets
1 c
chopped celery
1 c
chopped carrots
onion, chopped
6 Tbsp
unsalted butter
6 Tbsp
all purpose flour
3 c
vegetable broth
2 c
milk, whole ideally
1 tsp
parsley (dry) - or 1tbsp fresh
1/2 tsp
onion powder
1/2 tsp
garlic powder
1 tsp
1/2 tsp
shredded cheese

How to Make Fresh Broccoli Cream Soup


  • 1Boil 2 cups of water. Add broccoli, celery, and carrots. Boil 3-5 minutes. Drain and set aside.
  • 2In the same pot, saute onion in the butter until tender. Whisk in flour to form a smooth paste. Gradually add the milk and broth, whisking to combine. Bring to a boil and stir for ~1 minute.
  • 3Add the vegetables and all the rest of your ingredients. Reduce heat. Cover and simmer 20-30 minutes until vegetables are tender.
  • 4Serve with shredded cheddar cheese. Enjoy!
