Ingredients

  • 4 cups chopped fresh broccoli florets
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1/2 - onion, chopped
  • 6 tablespoons unsalted butter
  • 6 tablespoons all purpose flour
  • 3 cups vegetable broth
  • 2 cups milk, whole ideally
  • 1 teaspoon parsley (dry) - or 1tbsp fresh
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • - shredded cheese

How To Make fresh broccoli cream soup

  • Step 1
    Boil 2 cups of water. Add broccoli, celery, and carrots. Boil 3-5 minutes. Drain and set aside.
  • Step 2
    In the same pot, saute onion in the butter until tender. Whisk in flour to form a smooth paste. Gradually add the milk and broth, whisking to combine. Bring to a boil and stir for ~1 minute.
  • Step 3
    Add the vegetables and all the rest of your ingredients. Reduce heat. Cover and simmer 20-30 minutes until vegetables are tender.
  • Step 4
    Serve with shredded cheddar cheese. Enjoy!
