  • 4 c
    chopped fresh broccoli florets
  • 1 c
    chopped celery
  • 1 c
    chopped carrots
  • 1/2
    onion, chopped
  • 6 Tbsp
    unsalted butter
  • 6 Tbsp
    all purpose flour
  • 3 c
    vegetable broth
  • 2 c
    milk, whole ideally
  • 1 tsp
    parsley (dry) - or 1tbsp fresh
  • 1/2 tsp
    onion powder
  • 1/2 tsp
    garlic powder
  • 1 tsp
  • 1/2 tsp
  • ·
    shredded cheese

How to Make Fresh Broccoli Cream Soup


  1. Boil 2 cups of water. Add broccoli, celery, and carrots. Boil 3-5 minutes. Drain and set aside.
  2. In the same pot, saute onion in the butter until tender. Whisk in flour to form a smooth paste. Gradually add the milk and broth, whisking to combine. Bring to a boil and stir for ~1 minute.
  3. Add the vegetables and all the rest of your ingredients. Reduce heat. Cover and simmer 20-30 minutes until vegetables are tender.
  4. Serve with shredded cheddar cheese. Enjoy!
