This is an easy, fast version of minestrone soup. Never the less it's yummy!

  • c
    chopped onion
  • 3 tsp
    minced garlic
  • 2 Tbsp
    olive oil
  • 2
    14-1/2 oz cans chicken broth
  • 1
    16 oz jar marinara sauce
  • 1
    15 oz can red kidney beans, drained
  • 1 small
    bag frozen, sliced zucchini
  • 1
    10 oz bag fozen italian veggies
  • 1 c
    dried ditalini pasta
  • ·
    parmesan cheese to taste

How to Make fast and easy minestrone soup


  1. In lg pot, cook onion and garlic in oil over medium heat for 3 mins.
  2. Add broth, marinara sauce, kidney beans, frozen zucchini, and frozen veggies.
  3. Bring to a boil, add pasta. Cook, covered 10 min, or until pasta is done. Stir occasionally. Serve w/ parmesan cheese.
