    celery stalk, large dice
  • 1
    onion, large dice
  • 1 Tbsp
    fresh ginger, minced
  • ·
    juice of one orange
  • 4 c
    broth or water
  • 1 Tbsp
  • ·
    salt and pepper to taste

How to Make Elaine's Carrot Ginger Soup


  1. In a small amount of oil, sweat celery and onion until translucent. Add carrots and continue to sweat.
  2. Add ginger, orange juice, and broth (or water); simmer until carrots are very tender.
  3. Puree, and pass through mesh strainer. Season to taste, finish with a pat of butter, serve.
