- 15 - carrots, large dice
- 1 - celery stalk, large dice
- 1 - onion, large dice
- 1 tablespoon fresh ginger, minced
- - juice of one orange
- 4 cups broth or water
- 1 tablespoon butter
- - salt and pepper to taste
How To Make elaine's carrot ginger soup

Step 1In a small amount of oil, sweat celery and onion until translucent. Add carrots and continue to sweat.

Step 2Add ginger, orange juice, and broth (or water); simmer until carrots are very tender.

Step 3Puree, and pass through mesh strainer. Season to taste, finish with a pat of butter, serve.
