Ingredients

  • 15 - carrots, large dice
  • 1 - celery stalk, large dice
  • 1 - onion, large dice
  • 1 tablespoon fresh ginger, minced
  • - juice of one orange
  • 4 cups broth or water
  • 1 tablespoon butter
  • - salt and pepper to taste

How To Make elaine's carrot ginger soup

  • Step 1
    In a small amount of oil, sweat celery and onion until translucent. Add carrots and continue to sweat.
  • Step 2
    Add ginger, orange juice, and broth (or water); simmer until carrots are very tender.
  • Step 3
    Puree, and pass through mesh strainer. Season to taste, finish with a pat of butter, serve.
