Ingredients

15carrots, large dice

1celery stalk, large dice

1onion, large dice

1 Tbspfresh ginger, minced
-
·juice of one orange
-
4 cbroth or water
-
1 Tbspbutter

·salt and pepper to taste
How to Make Elaine's Carrot Ginger Soup
- In a small amount of oil, sweat celery and onion until translucent. Add carrots and continue to sweat.
- Add ginger, orange juice, and broth (or water); simmer until carrots are very tender.
- Puree, and pass through mesh strainer. Season to taste, finish with a pat of butter, serve.
