easy vegetable soup!!

I wanted something quick and easy to fix for lunch. Went to freeze and removed a package of frozen mixed vegetables. Got a bouillon and water and place in a saucepan. Had a tomato left from breakfast, cut that up with salt and pepper to taste. I had to have some cayenne to make it a little spicy for my taste. Got a sleeve of saltine crackers and soft butter, and PRESTO ready to eat!!!

Ingredients For easy vegetable soup!!

  • 16 oz
    frozen mixed vegetables
  • 1-1/2 c
    hot water
  • 1
    chicken bouillon cube, dissolved
  • 1/2
    ripe tomato, sliced and chopped, optional
  • 1 tsp
    salt or to taste
  • 1 tsp
    pepper or to taste
  • 1/2 tsp
    cayenne pepper, optional

How To Make easy vegetable soup!!

    In a medium size saucepan, heat water over medium heat. Take chicken bouillon add to water and dissolved.

    Add frozen mixed vegetables, tomato (optional), salt and pepper to taste. (I used cayenne but that is optional.)

    Bring to a boil, turn down to a simmer (low), and simmer for 45 minutes or until vegetables are tender. I sleeve of crackers and butter would go good with soup!!! ENJOY!!!
