easy vegetable gumbo

Another one of my favorite WW recipes. This dish is equally tasy prepared with a 7- ounce box of seasoning rice mix with lentils or spanish seasoned rice Mix. Your family will never know its a diet recipe trust me..lol

Ingredients

  • 1 can (15 ounce) black beans, rinsed and drained
  • 1 can (14 1/2 ounce ) diced tomatos with green chilles
  • 1 - (10 ounce) of frozen okra, cut and trawed
  • 1 medium red bell pepper
  • 2 cups vegetable broth
  • 1 - 7-ounce of seasoned rice mix

How To Make easy vegetable gumbo

  • Step 1
    Combine the beans, tomatos, okra, bel pepper, and broth in a large sauepan; bring to boil. reduce the heat and simmer covered , 3 minutes.
  • Step 2
    stir in the rice mix and simmer , covere,until the rice is tender, about 20 minutes. Serve with sour cream if desired.
