easy potato soup

September is grandparents month, I's not a grandmother but i am an aunt/g-aunt so sat back and get ready for fall cooking!! To me every cook should have a crock pot or two.

Ingredients

  • 6 cups potatoes, peeled, diced, cooked
  • 5 cups water
  • 2 cups onion, diced
  • 1/2 cup celery, diced (optional)
  • 1/2 cup carrots, diced (optional)
  • 1/4 cup margarine or butter
  • 4 teaspoons chicken bouillon granules
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 12 ounces can evaporated milk
  • 3 tablespoons parsley, fresh chopped
  • 8 ounces cheddar or colby cheese, shredded

How To Make easy potato soup

  • Step 1
    combine all ingreds., except milk, parsley, and cheese in slow cooker.
  • Step 2
    cover, cook on high 7-8 hrs, til veggies are tender. stir in milk and parsley. stir in cheese til it melts-heat thoroughly.
  • Step 3
    when i get ready to serve this i top each bowl with crunmled bacon and serve with garlic biscuits.
