Ingredients
- 2 1/2 pounds potatoes
- 1 large leek
- 1 can great northern beans
- 32 ounces vegetable broth, unsalted
- 1/2 teaspoon rosemary, dried
- 1/2 teaspoon sage, dried
- 1/2 teaspoon thyme, dried
- 1/2 teaspoon garlic powder
- To taste - salt and pepper
- - sour cream, fat-free
- or - greek yogurt
- Optional - cheese, low fat
How To Make darsh's potato leek soup

Step 1Peel and slice potatoes.

Step 2Slice the leek long ways and then separate and clean the layers. Cut off the dark green part of the leek and slice. Soften the leeks in a pan with a little butter or non stick cooking spray.

Step 3Add everything to crock pot and cook on low for 7 hours.

Step 4Serve with non fat greek yogurt or sour cream. You can also add a little low fat cheese if you like.
