Ingredients

  • 2 1/2 pounds potatoes
  • 1 large leek
  • 1 can Great Northern beans
  • 32 ounces vegetable broth, unsalted
  • 1/2 teaspoon rosemary, dried
  • 1/2 teaspoon sage, dried
  • 1/2 teaspoon thyme, dried
  • 1/2 teaspoon garlic powder
  • To taste salt and pepper
  • sour cream, fat-free
  • or greek yogurt
  • Optional cheese, low fat

How To Make darsh's potato leek soup

  • Step 1
    Peel and slice potatoes.
  • Step 2
    Slice the leek long ways and then separate and clean the layers. Cut off the dark green part of the leek and slice. Soften the leeks in a pan with a little butter or non stick cooking spray.
  • Step 3
    Add everything to crock pot and cook on low for 7 hours.
  • Step 4
    Serve with non fat greek yogurt or sour cream. You can also add a little low fat cheese if you like.
