Ingredients

  • 2 1/2 lb
    potatoes
  • 1 large
    leek
  • 1 can(s)
    great northern beans
  • 32 oz
    vegetable broth, unsalted
  • 1/2 tsp
    rosemary, dried
  • 1/2 tsp
    sage, dried
  • 1/2 tsp
    thyme, dried
  • 1/2 tsp
    garlic powder
  • To taste
    salt and pepper
  • ·
    sour cream, fat-free
  • or
    greek yogurt
  • Optional
    cheese, low fat

How to Make Darsh's Potato Leek Soup

Step-by-Step

  1. Peel and slice potatoes.
  2. Slice the leek long ways and then separate and clean the layers.
    Cut off the dark green part of the leek and slice.
    Soften the leeks in a pan with a little butter or non stick cooking spray.
  3. Add everything to crock pot and cook on low for 7 hours.
  4. Serve with non fat greek yogurt or sour cream. You can also add a little low fat cheese if you like.
