Ingredients

2 1/2 lb
potatoes
1 large
leek
1 can(s)
great northern beans
32 oz
vegetable broth, unsalted
1/2 tsp
rosemary, dried
1/2 tsp
sage, dried
1/2 tsp
thyme, dried
1/2 tsp
garlic powder
To taste
salt and pepper
sour cream, fat-free
or
greek yogurt
Optional
cheese, low fat

How to Make Darsh's Potato Leek Soup

Step-by-Step

  • 1Peel and slice potatoes.
  • 2Slice the leek long ways and then separate and clean the layers.
    Cut off the dark green part of the leek and slice.
    Soften the leeks in a pan with a little butter or non stick cooking spray.
  • 3Add everything to crock pot and cook on low for 7 hours.
  • 4Serve with non fat greek yogurt or sour cream. You can also add a little low fat cheese if you like.
