curried lentil soup
One day I had all this stuff in my refrigerator and pantry and I thought, "what can I make that is really healthy"? Well.... this is what I came up with. My husband loves it! It's a great soup any time of the year!

Ingredients
- 1 large - red onion, chopped
- 4 or 5 - stalks of celery, chopped
- 4 - carrots, chopped
- 2 - ears of corn or 1 small can of corn
- 4 cloves garlic, minced
- 1 1/4 cups olive oil
- 2 cups lentils, dry
- 1 quart chicken broth, low salt
- 3 or 4 cups water
- 2 - links of smoked turkey sausage, sliced
- 1 teaspoon curry powder
- 1 teaspoon turmeric, ground
- 1 tablespoon sea salt or taste to your liking
- 1 bunch handful of chard or spinach for the greenery
How To Make curried lentil soup

Step 1Chop all vegetables and saute in olive oil for about 5 to 8 minutes. Add chicken broth.

Step 2Then add lentils and water. Bring to a boil for one minute then simmer for 45 minutes to 1 hour.

Step 3While simmering for the last 15 minutes, add turkey, curry, turmeric, greens, and sea salt.
