this takes a little time to do but is worth it when done...... a good way to use all the cukes from veggie garden too........ it keeps in fridge well too!!!!

Ingredients
- 6-8 large cucumbers,grated
- 1 large red pepper,grated
- 1 bunch green onions,chopped fine
- 1 quart white vinegar
- 1/2 cup sea salt
- 1 cup sugar
- several dash hot sauce
How To Make cucumber soup

Step 1put all in lg glass bowl stir well to disolve salt and sugar put in fridge keep in fridge 48 hrs stirrin once an hr duriing walkin hrs....

Step 2after 48 hrs drain well keep juice....... put cukes into blender blend til smooth.... add juice to make soup concistancy[may add ice cold water if to viegary for ya] chill well serve with green onion as stirrer

Step 3this is great to have at picnic or when sittin pool side in the summer!!!!!
