creamy carrot soup

truth be told veggies are jus good for ya....but there are people like me who are not that keen on eatin some veggies so i try and find ways to get them in my diet soups seem to be the best way to do this

Ingredients

  • 2 pounds carrots,1/2 grated,1/2 sliced thin
  • 1 medium onion,chopped fine
  • 2 small ribs celery with leaves,chopped fine
  • 1 tablespoon dried parsley
  • - apple cider to cover
  • 2 tablespoons margarine
  • 1 pint sour cream
  • 1/3 cup maple syrup
  • 2 medium apples,pealed,cored,sliced
  • 2 teaspoons apple pie spice

How To Make creamy carrot soup

  • Step 1
    in soup pot put carrots and 1 t apple pie spice add cider to cover bring to boil lower temp to simmer cook til tender
  • Step 2
    while carrots cook in lg fry pan add margarine melt than add onion and celery cook til tender add parsley
  • Step 3
    once carrots cooked and onion/celery mix add to carrots also add sliced apples cook 5 min
  • Step 4
    add sour cream and other t pie spice taste...if needed add maple syrup
  • Step 5
    to serve laddle into soup bowls and sprinkle with pinch of apple pie spice............so good on cool fall day
  • Step 6
    NOTE:hubby read this recipe and said very good jus add bout a pound of good ham to it.........that would be good too!!!!!
