I came up with this tonight because we have been eating too much Xmas goodies at work and wanted something light.

Ingredients

  • 1 pound baby carrots
  • 1 medium sweet potato
  • 1 medium apple
  • 4 cups chicken broth
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon chopped garlic
  • 1/4 teaspoon creole seasoning
  • 1/4 cup evaporated milk
  • 1 tablespoon agave nectar

How To Make creamy carrot and sweet potato soup

  • Step 1
    Peel apple and sweet potato, chop with carrots in a food processor. Mix in medium size saucepan with the chicken broth. Add the rest of ingredients except evaporated milk and agave nectar. Bring to a boil and simmer until vegetables are tender.
  • Step 2
    Blend in pan with immersion blender or puree in batches in blender. Add agave nectar and evaporated milk and heat until almost simmering. Can thicken with 1-2 TBS instant mashed potato flakes if necessary.
  • Step 3
    Adjust seasonings to taste. The seasoning measurements are approximate, I just shake and taste as I go. Enjoy.
