I came up with this tonight because we have been eating too much Xmas goodies at work and wanted something light.

Ingredients
- 1 pound baby carrots
- 1 medium sweet potato
- 1 medium apple
- 4 cups chicken broth
- 1/2 teaspoon cumin
- 1/2 teaspoon cinnamon
- 1/4 teaspoon curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/2 teaspoon chopped garlic
- 1/4 teaspoon creole seasoning
- 1/4 cup evaporated milk
- 1 tablespoon agave nectar
How To Make creamy carrot and sweet potato soup

Step 1Peel apple and sweet potato, chop with carrots in a food processor. Mix in medium size saucepan with the chicken broth. Add the rest of ingredients except evaporated milk and agave nectar. Bring to a boil and simmer until vegetables are tender.

Step 2Blend in pan with immersion blender or puree in batches in blender. Add agave nectar and evaporated milk and heat until almost simmering. Can thicken with 1-2 TBS instant mashed potato flakes if necessary.

Step 3Adjust seasonings to taste. The seasoning measurements are approximate, I just shake and taste as I go. Enjoy.
