I came up with this tonight because we have been eating too much Xmas goodies at work and wanted something light.

baby carrots
1 medium
sweet potato
1 medium
4 c
chicken broth
1/2 tsp
1/2 tsp
1/4 tsp
curry powder
1/2 tsp
1/4 tsp
white pepper
1/2 tsp
chopped garlic
1/4 tsp
creole seasoning
1/4 c
evaporated milk
1 Tbsp
agave nectar

How to Make Creamy Carrot and Sweet Potato Soup


  • 1Peel apple and sweet potato, chop with carrots in a food processor. Mix in medium size saucepan with the chicken broth. Add the rest of ingredients except evaporated milk and agave nectar. Bring to a boil and simmer until vegetables are tender.
  • 2Blend in pan with immersion blender or puree in batches in blender. Add agave nectar and evaporated milk and heat until almost simmering. Can thicken with 1-2 TBS instant mashed potato flakes if necessary.
  • 3Adjust seasonings to taste. The seasoning measurements are approximate, I just shake and taste as I go. Enjoy.
