How to Make Creamy Carrot and Sweet Potato Soup
- Peel apple and sweet potato, chop with carrots in a food processor. Mix in medium size saucepan with the chicken broth. Add the rest of ingredients except evaporated milk and agave nectar. Bring to a boil and simmer until vegetables are tender.
- Blend in pan with immersion blender or puree in batches in blender. Add agave nectar and evaporated milk and heat until almost simmering. Can thicken with 1-2 TBS instant mashed potato flakes if necessary.
- Adjust seasonings to taste. The seasoning measurements are approximate, I just shake and taste as I go. Enjoy.
