How to Make CREAMY ASPARAGUS SOUP
- Break tough ends of asparagus and discard. Cut Asparagus spears in pieces 1-2 long.
Bring chicken broth to a boil and add asparagus.
Cook 6-8 minutes. Process asparagus and broth in blender (or force through a sieve, as it was done in olden days). Melt butter in heavy saucepan. Stir in flour, salt,pepper to make a smooth paste. Add asparagus mixture and milk. Bring to a boil, then lower heat and simmer for 5 minutes,stirring constantly.
