How to Make Country Mushroom Soup for 2
1In a 2 qt. saucepan, melt margarine. Stir in flour until smooth. Stir in chicken broth until smooth. Add salt and pepper. Simmer uncovered for 15 minutes, stirring occasionally.
2Meanwhile, saute mushrooms, celery and onion in a bit of oil til tender. Add to broth mixture. Simmer uncovered for 15 minutes.
3Then add half & half and heat through. Serve.
