Ingredients
- 1/4 cup margarine
- 1/4 cup flour
- 2 cups chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 pound fresh mushrooms, sliced
- 2/3 cup celery, chopped
- 1/4 cup green onion, chopped
- 2/3 cup half and half
- 1 or 2 tablespoons oil to saute veggies
How To Make country mushroom soup for 2

Step 1In a 2 qt. saucepan, melt margarine. Stir in flour until smooth. Stir in chicken broth until smooth. Add salt and pepper. Simmer uncovered for 15 minutes, stirring occasionally.

Step 2Meanwhile, saute mushrooms, celery and onion in a bit of oil til tender. Add to broth mixture. Simmer uncovered for 15 minutes.

Step 3Then add half & half and heat through. Serve.
