We eat mostly low salt, vegetarian in our house due to high cholesterol and blood pressure. This is a very filling soup. It is almost a stew.

Ingredients

  • 3 tablespoons unsalted butter
  • 1 large zucchini
  • 8 - baby portebello mushrooms
  • 1 - bell pepper
  • 1 bunch baby carrots, about 15-20
  • 6 sticks celery
  • 1 small white onions
  • 2 cloves garlic
  • 7 medium tomato
  • 1 large russet potatoes
  • 4 cups water
  • 1 pinch salt
  • 1 package lipton's onion soup mix
  • 1 package star pasta, about 7 oz

How To Make chunky veggie and stars soup

  • Step 1
    Melt butter in a large pot.
  • Step 2
    Chop all vegetables into large pieces, around 1/2 inch to an inch square.
  • Step 3
    Add zucchini and let cook for about 4 minuets.
  • Step 4
    Add mushrooms, bell pepper, and carrots and cook for another 3 minuets
  • Step 5
    Add the rest of the veggies and cook for about 5 minuets.
  • Step 6
    Add water, salt, and soup mix. Bring to a boil.
  • Step 7
    Reduce heat and simmer for an hour.
  • Step 8
    Bring up to a boil and add stars for about 8 mins.
