We eat mostly low salt, vegetarian in our house due to high cholesterol and blood pressure. This is a very filling soup. It is almost a stew.

  • 3 Tbsp
    unsalted butter
  • 1 large
  • 8
    baby portebello mushrooms
  • 1
    bell pepper
  • 1 bunch
    baby carrots, about 15-20
  • 6 stick
  • 1 small
    white onions
  • 2 clove
  • 7 medium
  • 1 large
    russet potatoes
  • 4 c
  • 1 pinch
  • 1 pkg
    lipton's onion soup mix
  • 1 pkg
    star pasta, about 7 oz

How to Make Chunky Veggie and Stars Soup


  1. Melt butter in a large pot.
  2. Chop all vegetables into large pieces, around 1/2 inch to an inch square.
  3. Add zucchini and let cook for about 4 minuets.
  4. Add mushrooms, bell pepper, and carrots and cook for another 3 minuets
  5. Add the rest of the veggies and cook for about 5 minuets.
  6. Add water, salt, and soup mix. Bring to a boil.
  7. Reduce heat and simmer for an hour.
  8. Bring up to a boil and add stars for about 8 mins.
