i have to work hard to get my youngest daughter to eat right. but when i make this soup its bottoms up and mom you didn't make enough. so see if you like this, nothing in it but tomatoes and spinach.

  • 1 large
    bag of baby spinach chopped
  • 6 large
    very large tomatos cubed large
  • 2 can(s)
    16oz diced tomatos (with garlic)
  • 3 can(s)
    tomato paste
  • 2 can(s)
    16oz tomato sauce
  • 2 Tbsp
    minced garlic
  • 2 Tbsp
    minced onion
  • 1/2 tsp
    oregano dried
  • 1/2 tsp
    each of black pepper,sea salt,onion power,garlic powder and ground basil
  • 6 -8 c

How to Make chunky tomato and spinach soup


  1. in a large soup pot mix all the above ingredients,starting with the tomatoes, then sauce and paste and water, end with the spinach.
  2. mix well till the tomato paste is dissolved. and the stock is smooth.
  3. let simmer for at least a hour and 30mins. serve or can. if you are canning this will fill 6 1 quart jars. place in a boil bath for 30 mins keeping water above lids at all times. set aside and test caps once cooled. lids should have no play.
