    un peeled cucumbers
  • 1 1/2
    vidalia onions
  • 2
    either veggie or chicken bullion cubes or 1 can chicken or veggie stock
  • 1 or 2 c
    1-2% milk
  • 4-6 c
    cottage cheese, lowfat
  • 1 Tbsp
    butter buds or butter flavoring ***optional only
  • 1 bunch
    dill chopped or 4 tablespoons dry dil
  • 1 tsp
    cumin powder (must be fresh or leave out) ****optional
  • ·
    salt & pepper to taste
  • 2 c
    crushed ice

How to Make Chilled Cucumber Soup


  1. take your chopped cucumber, onion, dill, spices, stock or bullion, milk, cottage cheese & whirl in the blender
  2. add crushed ice & thin or thicken with either stock or milk to your preference. I like mine like a thick cream-based consistency & sometimes add more ice to make it really chilled; especially if it is to be served on a hot summers day! :-)
