This is a delicious version of the fat laden original. I need to watch it... This is also low carb, high protien. Enjoy, my recipe.

Ingredients

  • 6 - un peeled cucumbers
  • 1 1/2 - vidalia onions
  • 2 - either veggie or chicken bullion cubes or 1 can chicken or veggie stock
  • 1 or 2 cups 1-2% milk
  • 4-6 cups cottage cheese, lowfat
  • 1 tablespoon butter buds or butter flavoring ***optional only
  • 1 bunch dill chopped or 4 tablespoons dry dil
  • 1 teaspoon cumin powder (must be fresh or leave out) ****optional
  • - salt & pepper to taste
  • 2 cups crushed ice

How To Make chilled cucumber soup

  • Step 1
    take your chopped cucumber, onion, dill, spices, stock or bullion, milk, cottage cheese & whirl in the blender
  • Step 2
    add crushed ice & thin or thicken with either stock or milk to your preference. I like mine like a thick cream-based consistency & sometimes add more ice to make it really chilled; especially if it is to be served on a hot summers day! :-)
