Ingredients
- 2 cups chicken broth
- 1/3 cup onion, chopped fine
- 1 bag (12 oz.) frozen broccoli, chopped
- 1 1/3 cups dry mashed potato mix, plain
- 2 cups shredded swiss cheese
- 2 cups evaporated milk
- 1/2 teaspoon salt
- 1/2 cup parmesan cheese, grated
How To Make cheesy broccoli and potato soup

Step 1In a large saucepan, heat the broth, onion, and frozen broccoli until boiling. Reduce heat and simmer, covered, about 5 minutes, stirring frequently.

Step 2Stir in the potato mix until well blended. Add the remaining ingredients, except the Parmesan.

Step 3Heat over low heat about 5 more minutes, stirring occasionally, until soup is heated through and cheese has melted.

Step 4Serve immediately and sprinkle with Parmesan cheese. Add croutons if desired.
