CHEESY BROCCOLI AND POTATO SOUP
2 cchicken broth
1/3 conion, chopped fine
1 bag(s)(12 oz.) frozen broccoli, chopped
1 1/3 cdry mashed potato mix, plain
2 cshredded swiss cheese
2 cevaporated milk
1/2 cparmesan cheese, grated
How to Make CHEESY BROCCOLI AND POTATO SOUP
- In a large saucepan, heat the broth, onion, and frozen broccoli until boiling. Reduce heat and simmer, covered, about 5 minutes, stirring frequently.
- Stir in the potato mix until well blended. Add the remaining ingredients, except the Parmesan.
- Heat over low heat about 5 more minutes, stirring occasionally, until soup is heated through and cheese has melted.
- Serve immediately and sprinkle with Parmesan cheese. Add croutons if desired.
