Ingredients

  • 2 c
    chicken broth
  • 1/3 c
    onion, chopped fine
  • 1 bag(s)
    (12 oz.) frozen broccoli, chopped
  • 1 1/3 c
    dry mashed potato mix, plain
  • 2 c
    shredded swiss cheese
  • 2 c
    evaporated milk
  • 1/2 tsp
    salt
  • 1/2 c
    parmesan cheese, grated

How to Make CHEESY BROCCOLI AND POTATO SOUP

Step-by-Step

  1. In a large saucepan, heat the broth, onion, and frozen broccoli until boiling. Reduce heat and simmer, covered, about 5 minutes, stirring frequently.
  2. Stir in the potato mix until well blended. Add the remaining ingredients, except the Parmesan.
  3. Heat over low heat about 5 more minutes, stirring occasionally, until soup is heated through and cheese has melted.
  4. Serve immediately and sprinkle with Parmesan cheese. Add croutons if desired.
