cheesy broccoli and potato soup

Ingredients

  • 2 cups chicken broth
  • 1/3 cup onion, chopped fine
  • 1 bag (12 oz.) frozen broccoli, chopped
  • 1 1/3 cups dry mashed potato mix, plain
  • 2 cups shredded swiss cheese
  • 2 cups evaporated milk
  • 1/2 teaspoon salt
  • 1/2 cup parmesan cheese, grated

How To Make cheesy broccoli and potato soup

  • Step 1
    In a large saucepan, heat the broth, onion, and frozen broccoli until boiling. Reduce heat and simmer, covered, about 5 minutes, stirring frequently.
  • Step 2
    Stir in the potato mix until well blended. Add the remaining ingredients, except the Parmesan.
  • Step 3
    Heat over low heat about 5 more minutes, stirring occasionally, until soup is heated through and cheese has melted.
  • Step 4
    Serve immediately and sprinkle with Parmesan cheese. Add croutons if desired.
