onion, chopped fine
3 Tbsp
all-purpose flour
1 tsp
1/2 tsp
3 c
low-sodium chicken broth
6 1/2 c
broccoli florets
1 c
whole milk
1 1/4 c
sharp cheddar cheese

How to Make Broccoli and cheese soup


  • 1in a lrg pot, heat the oil over med-high heat. add the onions and cook, stirring, until soft, 4 min or so. stir in the flour, garlic powder, and salt and cook for about 2 min.
  • 2whisk slowly in the chicken broth and simmer the liquid until it thickens lightly. Add the broccoli and cook until tender about 10 min.
  • 3Remove the soup from the heat and puree using a blender. whisk in the milk, 1 cup of the chedder cheese. serve sprinkled with cheddar cheese
