Ingredients

  • 4 1/2 c
    chicken broth (could use alternative for vegetarian option)
  • 1 pkg
    9 oz refrigerated cheese tortellini
  • 1 can(s)
    15 oz white kidney or cannellini beans, rinsed and drained
  • 1 c
    chopped fresh tomato
  • 1/2 c
    shredded fresh basil (or freeze dried)
  • 1 - 2 Tbsp
    balsamic vinegar
  • 1/4 tsp
    salt
  • 1/8 tsp
    pepper
  • 1/3 c
    shredded parmesan cheese

How to Make Basil Tortellini Soup

Step-by-Step

  1. In a large saucepan, bring broth to a boil.
  2. Add tortellini and cook until tender, about 6 minutes.
  3. Stir in the beans, tomato, and basil. Reduce heat; simmer uncovered for 5 minutes.
  4. Add the vinegar, salt, and pepper.
  5. Serve with cheese.
