basic cream of vegetable soup
I was looking for a way to use up a bit of asparagus...I came upon this poor orphaned recipe so I tried it--and adopted it!

Ingredients
- 3 tablespoons butter, unsalted
- 1 cup onion, chopped
- 1 - potato, peeled and diced
- 2 cups water
- 1.5 cups vegetables, steamed
- - "just a pinch" of salt
- - "just a pinch" of pepper
- 1/2 cup heavy cream
How To Make basic cream of vegetable soup

Step 1In a large saucepan, melt butter over medium heat then add the chopped onion and cook until tender without browning. As you can see, I elected to add some mushrooms that needed to be used up!

Step 2Stir in diced potato and liquid. Bring to a boil and simmer until potato is tender.

Step 3Stir in your steamed vegetable of choice and return to a simmer.

Step 4Puree the soup in batches in a blender and return to saucepan; or use an immersion blender - Leave 1 cup of vegetables not pureed if a chunkier soup is preferred.

Step 5Season soup with salt and pepper and finish with heavy cream. Heat through and garnish as you like!

Step 6SUGGESTION: Carrots, broccoli, spinach or peas would all be great in this recipe!
