ann's yummy curry carrot soup

This is from my friend, Ann, who is a wonderful cook. She is generous with her recipes.Thank you Ann.

Ingredients

  • 3 pounds carrots, chopped
  • 1 large onion, chopped
  • 2 tablespoons butter
  • 2 cloves garlic, finely chopped
  • 1 teaspoon curry powder (or more, if you like)
  • 1/2 teaspoon salt
  • dash pepper
  • 4 cups chicken stock (35 fl. oz)
  • 1 can coconut milk (400 gm)

How To Make ann's yummy curry carrot soup

  • Step 1
    In a large pot cook carrots and onions in the butter over medium heat for 10 minutes.
  • Step 2
    Add garlic, curry, salt and pepper. Cook for another minutes or two.
  • Step 3
    Add stock, cover and bring to the boil. Lower heat and simmer 15 minutes until vegetables are tender.
  • Step 4
    Add coconut milk, bring to a low boil, remove from heat.
  • Step 5
    Cool slightly. Blend in a food processor or use stick blender. Garnish with parsley and croutons.
