  • 3 lb
    carrots, chopped
  • 1 large
    onion, chopped
  • 2 Tbsp
  • 2 clove
    garlic, finely chopped
  • 1 tsp
    curry powder (or more, if you like)
  • 1/2 tsp
  • dash(es)
  • 4 c
    chicken stock (35 fl. oz)
  • 1 can(s)
    coconut milk (400 gm)

How to Make Ann's Yummy Curry Carrot Soup


  1. In a large pot cook carrots and onions in the butter over medium heat for 10 minutes.
  2. Add garlic, curry, salt and pepper. Cook for another minutes or two.
  3. Add stock, cover and bring to the boil. Lower heat and simmer 15 minutes until vegetables are tender.
  4. Add coconut milk, bring to a low boil, remove from heat.
  5. Cool slightly. Blend in a food processor or use stick blender. Garnish with parsley and croutons.
