Ingredients
- 3 pounds carrots, chopped
- 1 large onion, chopped
- 2 tablespoons butter
- 2 cloves garlic, finely chopped
- 1 teaspoon curry powder (or more, if you like)
- 1/2 teaspoon salt
- dash pepper
- 4 cups chicken stock (35 fl. oz)
- 1 can coconut milk (400 gm)
How To Make ann's yummy curry carrot soup

Step 1In a large pot cook carrots and onions in the butter over medium heat for 10 minutes.

Step 2Add garlic, curry, salt and pepper. Cook for another minutes or two.

Step 3Add stock, cover and bring to the boil. Lower heat and simmer 15 minutes until vegetables are tender.

Step 4Add coconut milk, bring to a low boil, remove from heat.

Step 5Cool slightly. Blend in a food processor or use stick blender. Garnish with parsley and croutons.
