carrots, chopped
1 large
onion, chopped
2 Tbsp
2 clove
garlic, finely chopped
1 tsp
curry powder (or more, if you like)
1/2 tsp
4 c
chicken stock (35 fl. oz)
1 can(s)
coconut milk (400 gm)

How to Make Ann's Yummy Curry Carrot Soup


  • 1In a large pot cook carrots and onions in the butter over medium heat for 10 minutes.
  • 2Add garlic, curry, salt and pepper. Cook for another minutes or two.
  • 3Add stock, cover and bring to the boil. Lower heat and simmer 15 minutes until vegetables are tender.
  • 4Add coconut milk, bring to a low boil, remove from heat.
  • 5Cool slightly. Blend in a food processor or use stick blender. Garnish with parsley and croutons.
