Ingredients
- 6 cups water or chicken broth
- 3 - carrots, sliced
- 2 - stalks celery with leaves, sliced
- 1 - yellow onions, chopped
- 1/2 cup chopped green or red pepper
- 1 - small bunch bok choy, chopped
- 1 can red beans
- 1 can chick peas
- 1 can canneloni beans
- 1/2 cup barley, uncooked
- 3 large bay leaves, dried
- - salt & pepper to taste
How To Make 3 bean barley vegetable soup

Step 1Prepare all vegetables

Step 2Bring water or chicken broth to a boil and add vegetables.

Step 3Rinse beans in cold water and add to pot.

Step 4Add bay leaves and salt if preferred.

Step 5Cook for 1/2 hour then adds barley. Let simmer 2 hours or till veggies aqre tender.
