Ingredients

  • 6 cups water or chicken broth
  • 3 - carrots, sliced
  • 2 - stalks celery with leaves, sliced
  • 1 - yellow onions, chopped
  • 1/2 cup chopped green or red pepper
  • 1 - small bunch bok choy, chopped
  • 1 can red beans
  • 1 can chick peas
  • 1 can canneloni beans
  • 1/2 cup barley, uncooked
  • 3 large bay leaves, dried
  • - salt & pepper to taste

How To Make 3 bean barley vegetable soup

  • Step 1
    Prepare all vegetables
  • Step 2
    Bring water or chicken broth to a boil and add vegetables.
  • Step 3
    Rinse beans in cold water and add to pot.
  • Step 4
    Add bay leaves and salt if preferred.
  • Step 5
    Cook for 1/2 hour then adds barley. Let simmer 2 hours or till veggies aqre tender.
