    water or chicken broth
  • 3
    carrots, sliced
  • 2
    stalks celery with leaves, sliced
  • 1
    yellow onions, chopped
  • 1/2 c
    chopped green or red pepper
  • 1
    small bunch bok choy, chopped
  • 1 can(s)
    red beans
  • 1 can(s)
    chick peas
  • 1 can(s)
    canneloni beans
  • 1/2 c
    barley, uncooked
  • 3 large
    bay leaves, dried
  • ·
    salt & pepper to taste

How to Make 3 bean Barley Vegetable Soup

Step-by-Step

  1. Prepare all vegetables
  2. Bring water or chicken broth to a boil and add vegetables.
  3. Rinse beans in cold water and add to pot.
  4. Add bay leaves and salt if preferred.
  5. Cook for 1/2 hour then adds barley. Let simmer 2 hours or till veggies aqre tender.
