turkey barley soup

A very hearty soup for chilly days. Can also be put in a crock pot. I adjust it as I think it needs every time I stir it so I tend to do stove top. I also use a chicken stock to intensify the chicken/turkey flavor.

Ingredients For turkey barley soup

  • 1 1/2 lb
    diced cooked turkey or chicken
  • 6 c
    chicken broth, low salt
  • 2 c
    chunked carrots
  • 1 1/2 c
    coarse chopped onion
  • 1 1/2 c
    coarse chopped celery
  • 1 tsp
    sea salt
  • 2
    bay leaves, dried
  • 28 oz
    diced tomatoes
  • 1 c
    pearled barley

How To Make turkey barley soup

  • 1
    Put all ingredients except barley into a large stock pot and bring to a boil. Add barley and simmer until vegetables are tender.

    If the soup seems too thin I add more barley until it's where I want it.
