low fat turkey rice soup
I make this soup alot. I used to make it not so "diet" but have adjusted my recipe due to now being on a low fat, low sodium diet. It can also be a chicke rice soup substituting chicken meat and broth.

Ingredients
- 4 cups lean turkey broth
- 2 cups - cooked turkey breast meat, chunked
- 2 - stalks sliced celery
- 1 cup fresh carrots sliced thin
- 1 teaspoon mrs. dash, or kroger salt free seasoning
- 1 teaspoon minced garlic
- 1 medium onion diced,
- 1 - bay leaf
- 1/2 teaspoon dry basil or oregano
- - pepper to taste
- 1 cup long grain, white, yellow or wild rice, washed well to remove most starch
How To Make low fat turkey rice soup

Step 1wash and soak rice at least 2 hours until ready to add with other ingredients

Step 2combine all ingredients in medium stock pot. bring to a boil over medium high heat

Step 3lower heat and simmer, covered, stirring occassionally, at least an hour

Step 4serve in one cup portions
