This is a delicious, healthy soup! I created this soup by looking into our fridge and finding lots of wonderful produce that I had no idea what to do with. The stars of this dish are the turkey and kale. The mushrooms add a great flavor as well. I'm so in love with this recipe. Very proud of myself.

Filled with flavor and textures, no one will miss a bit of fat when enjoying this healthier soup. Ground turkey adds a lean protein, and dicing up mushrooms bulks up the soup. Kale is nutrient-dense and has a nice flavor mixed with the sweet carrots. We loved the hint of smokiness from chopped bacon. With a bit of this and that, this homemade soup recipe can be thrown together pretty quickly, so it's great any night of the week when craving a warm and comforting bowl of soup.
Ingredients
- 2 medium carrots
- 1 package mushrooms
- 1/8 cup minced onion
- 2 cloves garlic, minced
- 1/8 cup chopped parsley
- 1 bunch fresh kale
- 1 pound ground turkey
- 32 ounces low-salt chicken broth
- 1/2 cup water
- 3 ounces tomato paste
- 4 slices cooked bacon, chopped
- 1/2 cup cooked rice
- - salt; to taste
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 1/2 teaspoons Creole seasoning
How To Make kitchen sink soup

Step 1Start by dicing the carrots, mushrooms, onions, garlic, parsley, and kale.

Step 2Brown the ground turkey (you don't have to drain the fat off). Saute the carrots and onions with the turkey.

Step 3Add chicken broth, water, and tomato paste.

Step 4Add kale, mushrooms, garlic, and bacon. Stir until combined.

Step 5Add seasoning and rice. Cover and simmer about 25 - 30 minutes.

Step 6Adjust seasonings to taste. Creole seasoning will give your soup a mild kick.
