  • 4 c
    tomatoes (8-10 tomatoes)
  • 4 c
    tomato juice
  • 12-14
    leaves fresh basil
  • 1 c
    evaporated milk
  • 3 Tbsp
    unsalted butter
  • 1/4 tsp
  • 1/4 tsp
    salt (or to taste)

How to Make Tomato Basil Soup


  1. Peel, core and chop tomatoes.
  2. Combine tomatoes and juice in a large saucepan. Simmer 30 minutes.
  3. In a blender, puree tomatoes along with basil leaves in small batches.
  4. Return to saucepan. Add milk, butter, salt and pepper while stirring over low heat, Cook 5 minutes,
  5. Garnish with basil leaves.
    Serve with your favorite bread.
