This is a wonderful healthy soup.

Ingredients

  • 4 cups tomatoes (8-10 tomatoes)
  • 4 cups tomato juice
  • 12-14 - leaves fresh basil
  • 1 cup evaporated milk
  • 3 tablespoons unsalted butter
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt (or to taste)

How To Make tomato basil soup

  • Step 1
    Peel, core and chop tomatoes.
  • Step 2
    Combine tomatoes and juice in a large saucepan. Simmer 30 minutes.
  • Step 3
    In a blender, puree tomatoes along with basil leaves in small batches.
  • Step 4
    Return to saucepan. Add milk, butter, salt and pepper while stirring over low heat, Cook 5 minutes,
  • Step 5
    Garnish with basil leaves. Serve with your favorite bread.
