spicy clear tomato soup w/a vegg base

These tomatoes are the last in my garden for the season. I decided to make an old recipe of mine, a spicy & clear tomato soup. Straight from the garden, with a veggie base to enhance the flavor. Such a simple recipe, and the taste is to die for! The addition of a couple cloves gives it a spicy taste, (a tip from grandma.) The perfect side is a grilled cheese sandwich, I made with my sons home-made rye bread. soooo good ! My neighbor made this recipe, and added pop-corn for a garnish. Sounds good.

Ingredients

  • 12 medium 12-15 tomatoes, washed & cut into quarters
  • 2-3 stalks celery- cut up
  • 2-3 medium carrots, cubed
  • 1 medium green or red bell pepper,seeded & chopped up
  • 1 medium onion- skinned & chopped up
  • 5 small whole cloves
  • 3-4 teaspoons sugar
  • 2 cups water
  • 2 tablespoons lemon juice, when soup is cooked

How To Make spicy clear tomato soup w/a vegg base

  • Step 1
    Put cut up whole tomatoes put in a soup pot with the water.
  • Step 2
    Add prepared onions celery, carrots, bell pepper and cloves.
  • Step 3
    Bring to a boil. Reduce heat, add sugar.
  • Step 4
    Simmer, partially covered, for 20 minutes. You might want to add a little water. Remove from heat. Stir in lemon juice.
  • Step 5
    Strain all into a bowl. Remove the cloves! Put veggies thru a food processer, And strain again. Add strained liquids to the soup. Salt, pepper and a sprinkle of parsley. Serve hot. With a grilled cheese sandwich.!! I use mayonnaise on the bread, instead of butter ...to grill in a skillet.
