This delicious, savory soup is what I came up with, with all of my left over veggies from the holidays...I am here to tell you it's delicious! I could have eaten the whole pot...lol!! If you like cabbage and soup, you will love this one...

It was just wonderful on a cold day like today at my house...so comforting!!

Ingredients

head of cabbage - medium shredded
4 c
chicken broth
1 c
each, diced onion, carrots and celery
1/2 c
chopped chives
1 Tbsp
chicken buillon paste - optional - i like the extra flavor
1 - 1 1/2 tsp
pepper
about 2 tsp
salt
1 tsp
dried thyme
1 tsp
dried rosemary
1/2 tsp
dried dill
2 - 3 c
smoked ham cubes - or leftover ham
1/4 c
butter
1 c
milk
2 c
heavy cream
3 Tbsp
flour
pinch
nutmeg

How to Make Savory Cabbage Soup - My Way

Step-by-Step

  • 1In a large ( 6 quart dutch oven or soup pot ) Add the broth and remaining 8 ingredients. Bring to a boil, then simmer for 25 to 30 minutes. .
  • 2Every so often, push down the cabbage into the broth, making sure all cooks evenly. It will cook down, so don't be alarmed at the amount.
  • 3Meanwhile, make white sauce:

    In a saucepan or skillet, combine the butter and flour. Cook over medium heat until the flour browns a little.
  • 4Whisk in the cream and milk. Cook and stir until thick. Add a pinch of nutmeg. Set aside.
  • 5Add the ham to the cooked cabbage, stir and simmer until heated through.
  • 6Add the cream sauce to the cabbage mixture, and simmer, covered, another 20 minutes.
  • 7Ladle into bowl..add chives , cheese, bacon...whatever you prefer. Is great all by itself.
