Ingredients
- 1 medium onion,peeled chopped
- 2 medium carrots, chopped
- 3 - 4 cloves garlic,crushed
- 1/2 pinch chilli powder
- 1 kilogram pumpkin,peeled chopped
- 4 cups chicken stock
- 1 scoop fresh parsley
- 1 cup sour cream,full-cream
- 1 cup bacon,remove fat,cut to small pieces and fryied until red
- 3 stalks fresh green celery,chopped
- 1 medium bunch of chives,for garnish
How To Make pumpkin soup with bacon & sour cream

Step 1In a large saucepan heat 2 tablespoons olive oil over medium heat add onion,carrots,celery and cook for 5-8 mins.Add garlic,chilli powder,stir and add pumpkin,parsley and stock.Cover with lid and simmer for 30-40 mins or until the vegetable is soft.

Step 2Take the soup from stove and with hand blender process,make nice smooth and thick soup.Taste and see,if anything nee to be added.Season with salt and freshly ground black pepper.

Step 3Serve the soup into a bowl with dollop of sour cream,fried bacon an croutons.
