Ingredients

  • 1 medium onion,peeled chopped
  • 2 medium carrots, chopped
  • 3 - 4 cloves garlic,crushed
  • 1/2 pinch chilli powder
  • 1 kilogram pumpkin,peeled chopped
  • 4 cups chicken stock
  • 1 scoop fresh parsley
  • 1 cup sour cream,full-cream
  • 1 cup bacon,remove fat,cut to small pieces and fryied until red
  • 3 stalks fresh green celery,chopped
  • 1 medium bunch of chives,for garnish

How To Make pumpkin soup with bacon & sour cream

  • Step 1
    In a large saucepan heat 2 tablespoons olive oil over medium heat add onion,carrots,celery and cook for 5-8 mins.Add garlic,chilli powder,stir and add pumpkin,parsley and stock.Cover with lid and simmer for 30-40 mins or until the vegetable is soft.
  • Step 2
    Take the soup from stove and with hand blender process,make nice smooth and thick soup.Taste and see,if anything nee to be added.Season with salt and freshly ground black pepper.
  • Step 3
    Serve the soup into a bowl with dollop of sour cream,fried bacon an croutons.
