TO CREATE A THICKER SOUP, BOIL 2 MED. POTATOES IN 2 C. OF THE BROTH USED IN THE RECIPE ABOVE. PUT BROTH AND POTATOES IN BLENDER AND PUREE, ADD TO SOUP.

  • 1 - tomato
  • 2 stalks celery, chopped
  • 1/2 cup barley
  • 2 cups water
  • 3 cups vegetable or chicken broth

    COMBINE ALL INGREDIENTS IN A LARGE POT AND BRING TO A BOIL. REDUCE HEAT AND SIMMER THE SOUP 1 HOUR.
