Ingredients

  • 1 medium onion, chopped
  • 1 medium cucumber, peeled and chopped
  • 1 - green pepper, chopped
  • 1 - garlic clove, minched
  • 1/4 teaspoon basil
  • 1/4 teaspoon oregano
  • 1/4 teaspoon thyme
  • 1/2 cup olive oil
  • 1/2 cup wine vinegar
  • 1 teaspoon salt
  • 4-5 - fresh tomatoes, or 1-16oz can **
  • 1 cup tomato or v8 juice
  • - garnishes: cucumber, celery stick, avocado

How To Make gazpacho

  • Step 1
    Blend all ingredients (except garnishes) in blender or food processor. Chill.
  • Step 2
    NOTES: I use 1-14.5oz can of "ready cut" tomatoes. Serves 2-4 (serves more for a first curse before dinner, which is usually when I serve it. I keep a small amount of the chopped veggies aside and add them back after everything is blended .. gives the soup a little texture.
