Ingredients
- 1 medium onion, chopped
- 1 medium cucumber, peeled and chopped
- 1 - green pepper, chopped
- 1 - garlic clove, minched
- 1/4 teaspoon basil
- 1/4 teaspoon oregano
- 1/4 teaspoon thyme
- 1/2 cup olive oil
- 1/2 cup wine vinegar
- 1 teaspoon salt
- 4-5 - fresh tomatoes, or 1-16oz can **
- 1 cup tomato or v8 juice
- - garnishes: cucumber, celery stick, avocado
How To Make gazpacho

Step 1Blend all ingredients (except garnishes) in blender or food processor. Chill.

Step 2NOTES: I use 1-14.5oz can of "ready cut" tomatoes. Serves 2-4 (serves more for a first curse before dinner, which is usually when I serve it. I keep a small amount of the chopped veggies aside and add them back after everything is blended .. gives the soup a little texture.
