Ingredients

  • 1 medium
    onion, chopped
  • 1 medium
    cucumber, peeled and chopped
  • 1
    green pepper, chopped
  • 1
    garlic clove, minched
  • 1/4 tsp
    basil
  • 1/4 tsp
    oregano
  • 1/4 tsp
    thyme
  • 1/2 c
    olive oil
  • 1/2 c
    wine vinegar
  • 1 tsp
    salt
  • 4-5
    fresh tomatoes, or 1-16oz can **
  • 1 c
    tomato or v8 juice
  • ·
    garnishes: cucumber, celery stick, avocado

How to Make GAZPACHO

Step-by-Step

  1. Blend all ingredients (except garnishes) in blender or food processor.
    Chill.
  2. NOTES: I use 1-14.5oz can of "ready cut" tomatoes.
    Serves 2-4 (serves more for a first curse before dinner, which is usually when I serve it.

    I keep a small amount of the chopped veggies aside and add them back after everything is blended .. gives the soup a little texture.
