My favorite soup. Easy to make too!

Ingredients
- 3 pounds potatos, pared and cut
- 4 - carrots pared.
- 1 large onion, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 1/2 cups milk
- 1 cup light cream
- 1 tablespoon fresh parsley
- 2 tablespoons butter
How To Make cream of potato soap

Step 1Place potatoes, carrots, and salt in large pot. Add water to cover vegetables. Cover and bring to boil. Reduce heat and simmer until vegetables are tender. Drain well.

Step 2Remove carrots and half of potatoes. Coarsely chop carrots and set aside. Mash remaining vegetables.

Step 3Add pepper and parsley. Coarsely chop carrots and add to soup.

Step 4Melt butter in pot. Add onion and saute on medium until transparent.

Step 5Gradually add milk. Add pepper, parsley, andcarrots. Simmer on low stirring frequently for 30 minutes. Add light cream stirring until blended.

Step 6Serve.
