I came up with this recipe yesterday as I had a lot of milk about to go sour on me and I like to put it to good use before that happens. I really really liked this soup so I named it Connie's Country Soup.

As the weather gets cooler, we crave hearty soup recipes. This easy to make soup is fantastic. There are so many delicious layers of flavor. From the saltiness of the bacon to the sweet flavor of the carrots, you cannot go wrong serving this soup for family and friends. It'll warm everyone up on a cold night.

Ingredients For connie's country soup

  • 3 lg
    baking potatoes
  • 1 stalk
    celery
  • 1 c
    baby carrots
  • 2 sm
    chicken bouillon cubes
  • 1 c
    water
  • 4 c
    milk
  • 1/2 c
    flour
  • 1 c
    sour cream
  • 1 pkg
    turkey bacon
  • 2 tsp
    salt
  • 1 tsp
    black pepper
  • 1/4 c
    butter
  • 1 sm
    onion

How To Make connie's country soup

  • Vegetables cut and on a plate.

    Chop up the vegetables first.
  • Chopped turkey bacon on a cutting board.

    Then, chop up turkey bacon also.
  • Potato rolled in paper towel.

    Microwave 3 large baking potatoes, one at a time with two very wet paper towels on top of each potato as it cooks for nine minutes each.
  • Cooled potatoes cut into chunks.

    Let cool then peel and cut into very large chunks. Set aside.
  • Butter, veggies, and turkey bacon in a pot.

    Use medium size soup pot, add to the butter, all vegetables, and turkey bacon. Simmer and keep stirring for seven to ten minutes until tender.
  • Water with bouillon cubes in a measuring cup.

    Have a boiling cup of water ready with two chicken bullion cubes added in it to melt.
  • Flour added to turkey bacon and veggie mixture.

    First, stir in the 1/2 cup flour.
  • Broth added to the pot.

    Then the cup of broth.
  • Milk and cream added to the pot.

    Next, add 4 cups of milk and 1 cup sour cream.
  • Adding potatoes, salt, and pepper to the soup.

    Now add the potatoes, salt, and pepper. Put stove on low and heat until all is good and hot. Keeping on low heat as this is a rich soup.

    Enjoyed this all by itself. I did not even add bread, crackers or cheese to this one. Hope you enjoy!
