chunky tomato soup with fresh basil

This is a soup that is more akin to a stew. It is very chunky and bursting with tomato flavor. It is a personal favorite.

Ingredients

  • 3 tablespoons olive oil
  • 1-2 pinch red pepper flakes
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped red bell pepper
  • 2 tablespoons finely chopped italian parsley
  • 3 cloves crushed garlic
  • 1 can 24 oz tomato puree
  • 2 cups vegetable stock
  • 2 cans 14.5 oz italian style stewed tomatoes
  • 2 tablespoons tomato paste
  • - salt
  • - pepper
  • - fresh basil leaves

How To Make chunky tomato soup with fresh basil

  • Step 1
    In a large pot, heat the olive oil and red pepper flakes over medium/hi heat.
  • Step 2
    Add the onions, red bell pepper, and parsley. Saute 2 minutes, stirring often.
  • Step 3
    Add the crushed garlic and cook 1 minute more. Stir often.
  • Step 4
    Add the tomato puree and the vegetable stock. Reduce to simmer uncovered 20 minutes. Stir occasionally.
  • Step 5
    Chop the stewed tomatoes and add along with all of the juices, Cook 5 minutes over med heat, stirring often.
  • Step 6
    Add salt and pepper to taste. Add tomato paste to thicken. Adjust to your preference.
  • Step 7
    Serve hot . Sprinkle with freshly chopped basil. Garnish with a whole basil leaf.
