I love a hearty soup and chowder, so I made this deliciousness to warm me up on a cold day. This makes a huge pot of soup, so please feel free to cut down the recipe.

Ingredients
- 1/2 cup butter, room temperature
- 1 large onion, chopped
- 4 stalks celery, chopped
- 1/2 cup all purpose flour
- 8 cups chicken broth
- 1 quart milk
- 2 cups cheddar cheese, shredded
- 2 cups american cheese
- 4 pounds california blend veggies, frozen
- 1 pound bacon, thick sliced
How To Make cheesy-veggie bacony goodness chowder

Step 1In a large stockpot, melt butter.

Step 2Add chopped onions and celery, cook until translucent.

Step 3Add flour and stir to coat veggies, cook the flour to remove the raw flavor.

Step 4Once boiling add cheese, a little at a time and whisk to combine. Don't add more until the other cheese has melted.

Step 5Once all the cheese has been added and melted pour in California blend veggies. Cook to warm the veggies through.

Step 6Once bacon is cooked and cooled, break into to small pieces and add to pot of veggie soup/chowder.

Step 7Enjoy a big bowl with some homemade, fresh out the oven garlic butter croutons.
