Cheesy-Veggie Bacony Goodness Chowder

I love a hearty soup and chowder, so I made this deliciousness to warm me up on a cold day. This makes a huge pot of soup, so please feel free to cut down the recipe.

1/2 c
butter, room temperature
1 large
onion, chopped
4 stalk(s)
celery, chopped
1/2 c
all purpose flour
8 c
chicken broth
1 qt
2 c
cheddar cheese, shredded
2 c
american cheese
4 lb
california blend veggies, frozen
1 lb
bacon, thick sliced


1In a large stockpot, melt butter.
2Add chopped onions and celery, cook until translucent.
3Add flour and stir to coat veggies, cook the flour to remove the raw flavor.
4Once boiling add cheese, a little at a time and whisk to combine. Don't add more until the other cheese has melted.
5Once all the cheese has been added and melted pour in California blend veggies. Cook to warm the veggies through.
6Once bacon is cooked and cooled, break into to small pieces and add to pot of veggie soup/chowder.
7Enjoy a big bowl with some homemade, fresh out the oven garlic butter croutons.
