summer sausage (salchichon) soup (for winter)

Ingredients

• 1 large salchichon or summer sausage (the one called abuelita is good,found in latin american stores)
• 2 cups large diced potaoes
• 2 cups large diced calabaza or acorn squash
• 1 cup scliced carrots
• 1/2 cup thinly sliced celery
• 3 - cobs of corn,cut into 9 pieces
• 2 tablespoons sofrito *recipe on my page.or you can buy it in the frozen section at your local grocers.
• 1/2 can goya tomato sauce
• 1/2 cup chopped cilantro
• 1/2 cup uncooked rice
• 1 can guandules or pigeon peas
• 1 teaspoon cumin
• 1 tablespoon paperika
• 1 tablespoon adobo seasoning,or combined salt,pepper,onion pow,garlic pow.
