This is my version of sausage and pepper soup and is completely paleo and good for you!

Ingredients

  • 1 pound loose italian sausage
  • 1 - red bell pepper, diced
  • 1 - green bell pepper, diced
  • 1 - onion, diced
  • 2-3 cloves garlic, minced
  • 1 - yellow squash, sliced into 1/4 inch slices
  • 1 - small zucchini, sliced into 1/4 inch slices
  • 2 cans italian style diced tomatoes
  • 1 can (small) tomatoe sauce
  • 1 tablespoon italian herb seasoning (or 1 tsp each basil, oregano and marjoram)
  • 1 quart chicken stock or broth
  • 1 dash sirachi sauce or 1/4 tsp red pepper flakes (optional)

How To Make paleo italian stew

  • Step 1
    In a 6 quart pan, brown sausage along with the peppers and onions-(if there is alot of fat you may want to use a folded paper towel in the bottom of the pot to absorb some of it.) add the garlic and the rest of the ingredients, and simmer for about 30 minutes. This will keep in the refrigerator and really is even better the 2nd day.
