My cousin gave me this recipe and it is so savory and a great comfort food.

Ingredients

  • 1 1/2 pounds browned mild italian sausage, skin removed. i've even used banquet sausage links with good results
  • 6 cups chopped zucchini-leave skins on
  • 2 cups chopped celery
  • 1 cup chopped onion
  • 2 cans stewed tomatoes
  • 2 teaspoons salt
  • 1 teaspoon oregano, dried
  • 1 teaspoon sugar
  • 1/2 teaspoon basil, dried
  • 1 teaspoon italian seasoning
  • 2 cups chopped green peppers

How To Make italian zucchini soup

  • Step 1
    Brown sausage, add the zucchini, celery, onion and stewed tomatoes, and the remaining ingredients and cook in a crock pot over night or around 7 hours. Serve with garlic bread and a salad.
