easy peasy potato cheese soup
GREAT way to use up those leftover mashed potatoes from Thanksgiving dinner!!!!! Add some rolls or a good chewy bread, and you've got dinner .

Ingredients
- 4 cups leftover mashed potatoes
- 2 cans (15 oz each) chicken broth
- 2 tablespoons dried parsley
- 1 bag (8oz) shredded cheddar, colby, swiss or jack cheese
- 1 package (optional) frozen chopped broccoli
How To Make easy peasy potato cheese soup

Step 1Heat chicken broth. If you are using broccoli, add when broth comes to a boil. Then add mashed potatoes, whisking to break up any lumps, and parsley.

Step 2When soup comes back to a boil, add shredded cheese and stir in until cheese is melted and soup is heated through. taste and adjust salt and pepper (i have found that the broth has enough salt for me)
