This is one delicious creamy potato soup..loaded with flavor.

Bad photos again, will have my comp back in working order tomorrow...pics don't do this yummy soup justice.

Ingredients

  • 1 stick
    butter, divided
  • 2 large
    sweet onions, coarsley diced
  • 2 medium
    potatoes, peeled and quartered
  • 1 clove
    garlic
  • 1/2 c
    heavy cream
  • 1 tsp
    kosher salt or to taste
  • 1/2 tsp
    pepper
  • pinch
    nutmeg ~ optional
  • a couple
    sliced green onions
  • dollops
    sour cream

How to Make ~ Savory Creamy Potato Soup ~ Delish

Step-by-Step

  1. In a dutch oven, saute` onions, in a 1/4 cup of butter until tender.
  2. Place quartered potatoes & garlic into pot and barely cover with water. Bring to a boil and then simmer for about 30 min or until potatoes are tender.

    Note: can use chicken stock instead of water.
  3. Remove from heat and pour into a blender. Blend until smooth.
  4. Pour back into pot and add seasoning, rest of butter, cream and stir. Heat through, but don't boil or will curdle the cream.
  5. Serve with green onion and a dollop of sour cream if desired.

    This soup is so flavorful and comforting...enjoy!
