Ingredients
- 4 - yukon gold potatoes
- 1 1/2 cups water or broth
- 5 slices bacon, divided
- 1 slice onion chopped
- 1 can cream of chicken soup
- 1/2 cup frozen corn
- 1/2 cup sliced mushrooms
- 1/2 cup fresh or frozen chopped broccoli
- 2 - hatch chiles
- 1 cup cooked chicken, chopped
- - salt and pepper to taste
How To Make not your mama's potato soup

Step 1Cut potatoes into bite sized pieces and place in pot with water. Chop one slice of bacon, add to pot along with onion. Bring to a boil, simmer potatoes till tender.

Step 2Add remaining ingredients, simmer for at least 15 minutes. While soup is simmering, fry remaining 4 slices of bacon (or bake in 400 oven) till crispy.

Step 3Chop bacon. Serve soup with grated Mozzarella and bacon. Enjoy.
