sonja's white chili

In Miami we recently had a cold spell. On the coldest night I told everyone we should have chili. One of my roommates cannot eat tomatoes, so I researched different white chili recipes and came up with my own and my family loved it.

Ingredients

  • 2-16 oz cans white northern beans
  • 2-14 oz cans chicken broth
  • 1 small jar chicken soup base
  • 2-4 oz cans diced green chiles
  • 1 - rotisserie chicken, deboned and diced
  • 1 package johnsonville mild or sweet italian sausage (5 in a pack) casing peeled and broken into a small meatball size pieces
  • 2 heaping teaspoons ground cumin
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano or oregano leaves
  • 3 tablespoons chili powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon black or white pepper
  • 2 teaspoons salt
  • 2 medium onions chopped
  • 4 - garlic cloves chopped
  • 3 stalks celery chopped
  • 4 - carrots peeled and grated
  • 1/2 large green bell pepper chopped
  • 1/2 large red bell pepper chopped
  • 1 cup water
  • 2 tablespoons olive oil
  • - mexican cheese or 4-cheeses, shredded (optional)
  • - sour cream (optional)
  • 4 cups cooked parboiled rice (optional)

How To Make sonja's white chili

  • Step 1
    IN A LARGE SAUCEPAN SAUTE GARLIC, ONIONS, CARROTS, CELERY AND PEPPERS IN OLIVE OIL.
  • Step 2
    ADD ALL INGREDIENTS (EXCEPT RICE, SOUR CREAM AND CHEESE)TO A CROCKPOT AND SLOW COOK FOR 4 HOURS.
  • Step 3
    SERVE IN BOWLS TOPPED WITH CHEESE AND SOUR CREAM. SOME MEMBERS OF MY FAMILY ALSO ENJOYED IT OVER WHITE RICE WITH THE TOPPINGS THEIR BOWLS. DELICIOUS!!!!
