Ingredients

  • 48 ounces chicken broth
  • 2 - chicken thighs
  • 1 clove garlic minced
  • 1 cup corn
  • 1 cup peas
  • 1/2 cup onion chopped
  • 1 cup cabbage chopped
  • 1 - green onion copped
  • 1 large celery stalk chopped
  • 1/2 - green pepper chopped
  • 8 ounces tomato sauce
  • 1 teaspoon italian seasoning
  • 1 teaspoon basil, dried
  • 1 teaspoon parsley
  • - salt and pepper to taste

How To Make nina's chicken vegetable soup

  • Step 1
    Poach chicken about 20 min. in broth. Take out after 20min and let the chicken rest.
  • Step 2
    Add vegetables and cook 30 min. Add diced chicken and cook 5 min. more.
  • Step 3
    Top bowl of soup with fresh grated parmesan reggiano. Enjoy!
